Pumpkin salad with spinach is a perfect and very healthy dish for any type of food. It is prepared quickly and easily, has a special aroma and contains many vitamins.
450 g pumpkin
50 ml of olive oil
1 teaspoon of lemon juice
1 tablespoon of honey
200 g of spinach
25 g mustard
salt and pepper
Method of preparation
Cut the pumpkin into small pieces and sprinkle with a little olive oil and honey. Season with salt and pepper to taste, then bake for 20 minutes.
Mix the lemon juice with the rest of the olive oil and the mustard until you get a homogeneous composition. Place slices of baked pumpkin on a platter with fresh spinach leaves, clean well and mix lightly with lemon juice.
